There was a time – not that long ago – when many of my vegetarian family members and friends traveling or moving to Osaka (or Japan in general) would simply put their vegetarianism on pause while here out of sheer logistical difficulty. When asked what a pescetarian was, a friend of mine once joked, “A pescetarian is a vegetarian who eats at restaurants in Japan.”
Vegetarian and vegan fare in Osaka is today much easier to find. This is obviously good news not only for vegetarians and vegans, but also for those who for health reasons like allergies or the like need to avoid certain ingredients. As many such restaurants also incorporate or emphasize other dietary approaches like gluten-free or macrobiotic in their menus, it also by association provides more of those options as well.
But as a growing trend in Japanese public dining, I think this is actually a shift with more significance than just dietary convenience. In a very real sense, it is a kind of cultural return. Japan has a long, deep, and storied history of vegetarianism, partial vegetarianism, pescetarianism, and even diets approximating modern veganism. At times, these wereeven legally enforced – for reasons ranging from religious to environmental. It’s also the birthplace of “shojin ryori” – an umbrella term for a wide variety of sophisticated and delicious Buddhist temple devotional cuisines that are easily one of the country’s most underrated culinary achievements.
In this list, we take a look at some standout vegetarian and vegan dining options – including shojin ryori sushi – across the nation’s kitchen, as Osaka is affectionately known.
