While Negiyaki Yamamoto serves up a solid selection of okonomiyaki, it also ranks as one of the best places in Osaka to eat negiyaki – a close sibling of okonomiyaki featuring most of the same elements, but with the cabbage filling replaced entirely with sliced scallions.
In addition to the difference in taste, this also makes for a thinner and crispier griddle cake. Unlike okonomiyaki, the more delicate negiyaki is usually served without mayonnaise. It is sometimes eaten with a glaze of okonomiyaki sauce, and sometimes instead with a light coating of soy sauce.

Negiyaki Yamamoto’s batter and frying technique produce a truly delightful combination of crispiness and fluffiness that is tasty enough in the shop’s okonomiyaki but really shines in its masterful negiyaki. There, it takes advantage of the light soy sauce glaze and absence of mayonnaise and bonito flakes to really let the scallions, batter, beni-shoga (plum-pickled ginger), and toppings shine through.

Negiyaki Yamamoto’s menu takes a fairly standard approach, with no big twists or surprises in toppings or combinations. This plays to the strengths of its execution of the classics, and speaks to well-earned confidence in letting its quality speak for itself.
